Vin McCann studied at Bucknell University and Fordham University. In the 1980s, he joined the largest multi-concept franchisee in the country, National Restaurant Management, and after three years eventually became the company's chief operating officer. During his tenure, he doubled the company's size.

In 1992, he became executive vice president of California-based Specialty Restaurant Company and handled all restaurants east of the Mississippi. He has worked at Wells House in the Adirondacks and was a vice president at Boulder Creek Steakhouse Group. McCann has managed restaurant operations ranging from $500,000 to $400 million in revenue.

He started teaching at ICE in 2004. What Vin enjoys most about teaching is the exchange he has with students, saying, “It refreshes my perspective on the industry to work with young people so excited about the business.”
