Paul Sherman brings his experience from forty years in the hospitality industry to ICE LA as the Lead Instructor of Wine Studies.
As an Advanced Sommelier certified by the American Court of Master Sommeliers, Paul's expertise has earned him multiple wine positions at fine dining and educational institutions all over California. He worked as a sommelier at Valentino Ristorante in Santa Monica for nearly 20 years while also working as an instructor at Le Cordon Bleu College of Culinary Arts and UCLA Extension. In total, Paul has over 15 years of experience teaching about wine.
In 2019, Paul began working as a maitre d’ and sommelier at Jonathan Club in downtown Los Angeles, where he both provided customer-facing wine guidance as well as worked closely with chefs to create tasting menus and wine pairings. This also included conducting virtual tastings for members of the club during the COVID-19 lockdown.
In his free time, Paul loves to drink wine and eat good food, practice yoga and ride his motorcycle. He brings immense knowledge and leadership to ICE's Intensive Sommelier Training and we are so grateful to have him on the faculty team.
