When Do Classes Start?
Scheduling options vary by program and campus and may include on-campus daytime and evening classes, as well as flexible online options. Flexible scheduling — including morning, afternoon, evening, weekend, and online classes (weekend professional classes are exclusive to the New York campus) — allows students to train around work and life commitments.
As for program start dates, the Institute offers multiple options throughout the year, with availability varying by program, campus, and online formats.
Class schedules are designed to accommodate a range of student needs and may include daytime or evening options, depending on the program. Our Admissions Representatives can guide you through upcoming start dates and help you plan a timeline that fits your goals.

What Are the Admissions Requirements?
We take a holistic approach to admissions, evaluating each applicant’s motivation, goals and readiness for professional training. Basic requirements include:
- Education: High school diploma or GED (with documentation)
- Online readiness: Completion of an online readiness assessment (for online programs)
- Residency: Legal ability to study in the United States
- Age: Minimum age requirements apply for sommelier programs (21 in NY, 18 in LA)
Is Financial Aid Available?
Yes — financial aid is available for those who qualify. Options may include:
- Federal Aid: Federal grants & loans are available for qualifying students. Among these are FSEOG, Pell grants and subsidized & unsubsidized grants.
- Loans (via completion of a valid FAFSA application)
- Private Student Loans
- Scholarships: School scholarships and industry partner opportunities
- Military Benefits: Eligible students may use Post-9/11 GI Bill® benefits and other VA programs
- Tuition Discounts: Available for select students, including those pursuing dual diplomas
- Tax Credits: Programs like the American Opportunity and Lifetime Learning Credits

How Long Does It Take to Complete a Program?
Programs are designed to deliver focused, career-driven training through a structured progression — meaning students build skills step-by-step, from foundational techniques to more advanced applications over time. They include:
- Culinary Arts: 8–12 months
- Pastry & Baking Arts: 8–11 months
- Health-Centered Culinary Arts: 8–13 months
- Restaurant & Culinary Management: 8–9 month options
- Tourism, Travel & Hospitality Management: 8 or 12 months
- Culinary Arts & Management AOS: 14–16 months
- Culinary Arts & Food Operations (Online): 16 months
Students may attend classes two to five days per week, depending on their schedule. Most programs include a hands-on externship that offers students real-world experience in professional kitchens and the opportunity to work alongside industry professionals in active kitchen environments.
