Virtual Instruction from ICE Experts

The premier recreational cooking school debuts online versions of our consistently sold-out classes with all-new menus and professional chef instruction via live video.

The Institute of Culinary Education's recreational division is known for more than 800 cooking, baking, beverage and professional development classes a season for 26,000 people a year. Now, we've added free online cooking classes to the menu for home cooks of all levels via Zoom Webinar. Our professional chefs will guide you through crafting plant-based comfort foods, baking the ultimate cookies, perfecting one-pot paella, hosting the ultimate Taco Tuesday and tackling sous vide techniques. We can't wait to be back in the kitchen with you.

  1. Register on Zoom for the class desired. Sign up for as many as you like!
  2. Upon registration, you will receive a confirmation email that includes the ingredients and equipment needed if you choose to cook along with our chefs.
  3. A few days before the class, you will receive a reminder email with the recipes so that you can follow along at home.
  4. Only the chef will be visible on video, and you will have the opportunity to type questions during a Q&A.
  5. Click the Zoom link at the time of class and enjoy!

In this free online cooking class, Chef Frank Proto will cover how to make fresh flour tortillas, grilled Adobo chicken, quick pickled onions, lime crema and a classic margarita to drink!

Thursday, June 25, 6-7:30 p.m. EST

Make the one-pot profusion of Spanish flavors that paella comprises — seafood, chicken, chorizo, rice and more — come to life. In this virtual class, Chef Frank Proto will teach you how to make a classic paella from Valencia, in addition to one of Spain’s most popular tapas – pan con tomate – and a refreshing Spanish wine cocktail. Your menu includes paella Valenciana (paella with shrimp, chicken and chorizo), pan con tomate and tinto de verano (summer red wine).

Veganize two classic comfort foods: burgers and chocolate chip cookies! In this online plant-based cooking class, Chef Tracy Wilk will reveal how to transform these go-to foods into vegan versions while maintaining bold, satisfying flavors. On your menu: black bean and quinoa burgers with mango salsa, kale chips and coconut chocolate chip cookies.

Cookie Cocktail Hour

Friday, July 10, 6-7:30 p.m. EST

It’s cookie baking time! Learn how to make the ultimate chocolate chip cookie and a boozy drink to pair it with in this fun, online baking class taught by ICE Chef Tracy Wilk. We will make Tracy’s famous sea salt chocolate chunk cookies paired with a bourbon milk punch.

Sous Vide Basics

Saturday, July 18, 12-1 p.m. EST

Explore the basics of sous vide cooking in this virtual demonstration and discussion with ICE Director of Culinary Research and Development Barry Tonkinson. Chef Barry will demonstrate vacuum sealing and cooking proteins, as well as a vegetable and puree preparation with a menu of pork belly with parsnip and horseradish puree, strip steak with Dijon glaze and madras curry-spiced carrot, and lime and pink peppercorn creme brulee with marinated strawberries.
