Join Nicolas Botomisy for a plated desserts class through our Center for Advanced Pastry Studies (CAPS)! CAPS is designed for current industry professionals, offering single- and multi-day continuing education workshops taught by master chefs and critically acclaimed artists from all over the world. At CAPS, you will refine your skills, learn new and innovative techniques, and expand your current repertoire with hands-on classes among peers. What's more, all CAPS classes are approved for American Culinary Federation-certified education hours.

About Nicolas Botomisy

Chef Nicolas Botomisy has been a pastry chef for more than18 years, including work at restaurants with two and three Michelin stars in France and the U.K., and luxury hotels such as the Four Seasons in Japan and the USA. He grew up in the South of France cooking with his grandmother. After studying in the region, he worked at the Michelin-starred restaurants Relais de la Poste, Carré des Feuillants and Georges V. in France and Waterside in the U.K. While working in Paris, Nicolas met his Japanese wife and decided to move to Japan. There he joined the École Valrhona Tokyo, then worked at the Valrhona Brooklyn school. In 2018, Chef Nicolas opened ateliers in Tokyo specializing in chocolates while traveling back and forth to the U.S. He loves to teach and share his knowledge with others, and bases his teaching programs in a technical way around the ingredients, their roles and ways to feature them best. He will explain how he builds tastes through feelings and emotions and then allow students to apply the techniques to their own work in the class. Chef Nicolas will create various types of desserts, including high-end gastronomy, banqueting and bistro-style dishes. Techniques will include emulsion, mousse (different kinds), ice cream, sherbet, chocolate tempering, crunchy décor, sablé, sponge, sous vide cooking and candied fruits.

Please note: ICE's dress code requires all students to wear black, khaki or checkered pants, a chef's coat and black closed-toe shoes. There are no exceptions. Students who come to class without a chef's coat will be required to purchase one from the Admissions Department.
