Miguel gained his restaurant experience at the likes of Chez Panisse, Momofuku and Casa Mono before becoming the operating partner and wine director of Pinch Chinese in Soho. Known for soup dumplings and natural wine, the restaurant earned a Bib Gourmand designation in the 2020 Michelin Guide and is opening a second location this year. Miguel has an advanced certification with merit from the Wine and Spirit Education Trust (WSET) and is certified with the Sake Education Council.
