On the Line with Chef Antonio De Iseo

Husband-and-wife-duo, Antonio and Brenda De Iseo, are the founders of Fiorentini in Rutherford, New Jersey. Antonio, owner and head chef, was born and raised in Florence, Italy, moved to New York in 2012, where he worked at venerable restaurants including Le Cirque, Sea Grill at Rockefeller Center and his latest role as executive chef at Metropolitan Opera.

In partnership with ALMA, the International School of Italian Cuisine in Parma, join Chef for an in-person demonstration of traditional spaghetto alla carbonara; tortello di carbonara, polvere di guanciale e fonduta di pecorino (Carbonara tortelli dusted with pork cheek powder and pecorino cheese fondue); and controfiletto di cervo, castagnaccio, cavoletti di Brussels, aglio nero e salsa di mostarda (venison sirloin, chestnut cake, Brussels sprouts, black garlic and mostarda sauce).
