The former head chef of Sweden's Fäviken went from serving a 30-course menu that you may have seen featured on "Chef's Table" or "Mind of a Chef," to directing Denmark's MAD Academy, which aims to "support the hospitality and food industry with tools and knowledge for making positive change." Iconic Noma chef René Redzepi founded MAD in 2011, and today Chef Magnus leads programming promoting sustainability, leadership and more essential topics for the industry through the organization's school.
