Chef Rose Noel joins Ai Fiori as Executive Chef, bringing an inspiring trajectory of high-end fine dining, global flavors and an unwavering focus on craft and place.

Raised in Brooklyn to parents who cooked at home, Rose’s early love of food was born from the love of cooking with family and friends. After completing a bachelor’s in business, she pivoted to the culinary world by attending the Institute of Culinary Education in New York, where she earned professional credentials.

Her formative career included line-up at New York restaurants such as Dovetail and Maialino,This was follow by opening Manhatta as Executive Sous Chef and Maialino Mare in Washington DC as Executive Chef. She moved back to NYC to open Hav & Mar and most recently at Peak Restaurant, located in Hudson Yards. There she shaped a menu rooted in New York sourcing and her heritage (Haitian + Caribbean influences) with fresh technical refinement.

As Executive Chef at Ai Fiori, Rose crafts seasonal, ingredient-driven cuisine that reflects the restaurant’s timeless luxury and contemporary spirit. Her style is refined yet bold: she understands classical technique and plate architecture, while also drawing from her roots and global perspectives to deliver dishes that feel both anchored and adventurous, but above all delicious.
