Chocolate Demo with Daniel Corpuz

*Open to ICE students only*

Chef Daniel is inviting students and faculty to an intensive one-hour crash course on chocolate. He will walk attendees through the tree-to-bar process, offering both a figurative and literal taste of chocolate.

During the demo, participants will see where chocolate comes from and sample chocolate roasted and produced in the school’s Chocolate Lab. They’ll compare and contrast flavors from different origins and explore how those flavors translate into brownies.

More About Daniel:
Daniel Joseph Corpuz is the pastry chef and chocolatier behind Daniel Corpuz Chocolatier. An artisan chocolate shop that handcrafts Asian and Filipino inspired chocolates and confections located in New York City's historic Chinatown. An alumnus of the Culinary Institute of America, he achieved his Associates Degree in Baking and Pastry and his Bachelor's Degree in Food Business Administration in 2019. After working in Micheline restaurants like The Modern, One White Street, and The Clocktower, Daniel Shifted to work primarily with chocolate as a result of the pandemic. This yielded the opportunity to be on Netflix's 'School of Chocolate,' with renowned Pastry Chef Amaury Guichon. A recent addition to the Institute of Culinary Education, Daniel is now the Chocolatier and Director of the Chocolate Lab at the school, and has been tasked with sharing his expertise on chocolate and cacao to those aspiring to enter the world of chocolate.
