A graduate of Vassar and the Art Institute of Chicago, Elisa Strauss was working as a designer for Ralph Lauren when she started using cake as a creative medium. She launched Confetti Cakes in 2000. Her creations have appeared on the Today Show, Sex and the City, and The View, and in Martha Stewart Weddings, InStyle, Marie Claire, Elle, Modern Bride, Bridal Guide, and many more. She has appeared in person on Food Network Challenge and 30-Minute Meals With Rachael Ray. She fondly remembers her time at ICE, saying, “ICE has supplied me with constant support as I created my business from scratch. It has also been a great venue for hiring employees and has helped me stay in touch with other professionals in the industry. It was the perfect place for me to change careers from fashion to food.”
