These Thai skewers are a favorite of many and such an easy summer snack to serve while waiting for the main dish to finish up.

Yield: 6 to 8 Skewers

Chicken Sate with Spicy Peanut Sauce

Ingredients 

  • 1 teaspoon fish sauce
  • 1 teaspoon sugar
  • 1 teaspoon curry powder
  • ½ teaspoon ground turmeric
  • 1 teaspoon minced garlic
  • ¼ teaspoon ground coriander
  • ¼ teaspoon ground cumin
  • ½ teaspoon salt
  • 2 tablespoons coconut milk
  • 2 tablespoons canola oil
  • ½ pound skinless, boneless, chicken breasts, sliced diagonally against the grain into 2-inch-wide strips
  • Wood skewers, soaked in hot water for 30 minutes

Instructions  

  1. Whisk together the fish sauce, sugar, curry powder, turmeric, garlic, coriander, cumin, salt, coconut milk, and canola oil. 
  2. Add the chicken to the mixture and marinate for 30 minutes. 
  3. Thread chicken onto the skewers. Season with salt. 
  4. Grill the chicken on a well-oiled grill pan over high heat, to sear, or on an outdoor grill over a nice bed of embers until it has a crispy outside but is still tender and opaque inside, 1 to 2 minutes on each side. The meat should not be pink inside.
  5. Serve with the spicy peanut sauce.
