10/14 - A Hudson Valley Feast

October 14, 2016 6:00 PM - 10:00 PM
Institute of Culinary Education

While it's easy to feel far removed from nature and farmland in New York City, we happen to be close to some of the most fertile soil in America: New York's Hudson Valley. Home to dairies, bee colonies, vineyards, orchards, and beautiful farmland, the local bounty has been an inspiration to chefs and residents for centuries. Anthony Sasso, a product of the Valley, will guide you through a true farm-to-table meal showcasing the region's farmers, brewers, and artisans: Grape Salad with Mountain Cheese and Red Wine Vinaigrette; Local Striper Crudo and Kohlrabi; Upstate Honey Glazed Carrots; Beef Tartar with Greenmarket Mushrooms; Celery Root Soup with Sunflower Seeds and Butternut Croutons; Pork Chop with Spinach and Apple Mostaza; and Rose's Apple Pie with Salted Caramel and Creme Fraiche.
