Assistant Director of Purchasing

POSITION SUMMARY:
The Institute of Culinary Education (ICE), one of New York City's largest and most active centers for culinary education, is seeking a full time Assistant Director of Purchasing

SPECIFIC JOB RESPONSIBILITIES:
• Manage a floor staff of about 10 employees
• Maintain quality control
• Administer and reconcile inventory and purchasing software
• Manage time and attendance of employees and work with payroll
• Devise schedules
• Track food costs and preparing cost-outs
• Devise and implement control strategies
• Prepare budgets and tracking variances
• Prepare spreadsheets analyzing food and labor costs
• Assist staff with purchasing and stewarding duties as required

EXPERIENCE AND EDUCATIONAL REQUIREMENTS:
• A minimum of 5 years as Manager of food and beverage/purchasing in a food-service or hospitality operation or minimum of 3 years as a Sous Chef in a restaurant
• Hospitality Management or Culinary Arts training not required but encouraged
• Must have excellent interpersonal, communication and management skills
• A strong grasp of budgeting, reporting, and controls is essential
• Must be proficient in creating Excel spreadsheets
• Excellent food knowledge is a plus.
• Highest standards of ethics
