Daniel Leader studied philosophy at the University of Wisconsin prior to attending the Culinary Institute of America. Working as a chef, his cooking resume included Regines, Raou'ls, The Water Club, La Grenouille, The Palace, and Stallmastergarden in Stockholm, Sweden. Introduced to the baking world on trips to France, he slowly changed directions and began his interest in traditional bread making.
Bread Alone opened in 1983 and for more than 30 years Dan has continued to grow as a baker. His 4 books, Bread Alone, Local Breads, Panini Express, and Simply Great Breads, are well regarded and Local Breads and Bread Alone both won the IACP Best Baking Book of the Year award.
Bread Alone produces thousands of certified organic wholegrain hearth baked breads each day, sold at hundreds of stores including Fairway, Whole Foods, and many more. Bread Alone is also a 30-year vendor and the Greenmarket's in NYC. Dan has consulted for companies around the world including Wegman's, Stew Leonard's, Fairway, HEB, and Pickn'Pay in South Africa. In South Africa Dan started a baking charity International Community Bakeries teaching baking skills to impoverished women and their children.
Dan has taught at the CIA, FCI, and ICE where he is on the chef advisory board. Dan continues to write and study baking around the world.
