At ICE I was exposed to many different pastries and techniques. I still use that experience today in developing new products, and perfecting old ones.
Biography
David Crofton met Dawn Casale when he was a student at ICE taking evening Pastry & Baking Arts classes. She needed help baking cookies during the day, and the rest is history. Now they run One Girl Cookies, a growing mini cookie empire. The couple has a thriving Brooklyn business, with a second location in the Dumbo neighborhood. They published their first cookbook, One Girl Cookies: Recipes for Cakes, Cupcakes, Whoopie Pies, and Cookies from Brooklyn's Beloved Bakery (Random House) in 2012.
