Chef Ksenia Penkina is a confectioner whose amazingly beautiful mousse cakes have taken the internet by storm. Originally from Russia, she trained in pastry in the UK and Switzerland. Chef Ksenia teaches her techniques worldwide and joins us from her base in Vancouver for a hands-on master class. Chef Ksenia will share with us her knowledge of chemical reactions, proper techniques, possible mistakes and remedies and techniques to create delicious and visually stunning cakes.
