Elite Chef Demo: José Avillez

José is the chef of Lisbon's first two-Michelin-starred restaurant, Belcanto. He'll live stream a demonstration of three Portuguese dishes: giant red shrimp with ash and its head sauce; seabass with butternut squash purée “scales,” razor clams and clam dashi, lime zest and pumpkin seed oil; and suckling pig revisited, crisps, orange and salad.

José Avillez studied with the key author on traditional Portuguese gastronomy, Maria de Lourdes Modesto, and launched his culinary career with internships at one-Michelin-starred Fortaleza do Guincho restaurant in the five-star hotel of the same name in Cascais, Portugal. He went on to intern with Alain Ducasse and Éric Fréchon in France and then trained under Ferran Adrià at three-Michelin-starred El Bulli in Spain.

Today, Chef José has 14 restaurants in Lisbon, Porto and Dubai, namely Belcanto, which earned a Michelin star in 2012, months after opening, and added a second star in 2014 — a first in Lisbon. Belcanto is No. 42 on the 2019 World's 50 Best Restaurants list, serving contemporary Portuguese cuisine with two tasting menus intended to tell diners a story.
