Chef James will be showcasing the latest additions to ICE’s Culinary Technology Lab, including the Control Freak induction system, the SonicPrep ultrasonic homogenizer, and the Rotary Evaporator. In this demonstration, students will learn groundbreaking techniques that can employed to craft intense flavors with unexpected results. Students will get to taste components in progress as well plated dishes, including: Savory Dairy-Free "Whipped Cream"; Constructed Butter; and more.
