Three-Day CAPS Workshop
Join Karen Portaleo for a carved cake class through our Center for Advanced Pastry Studies (CAPS)! CAPS is designed for current industry professionals, offering single- and multi-day continuing education workshops taught by master chefs and critically acclaimed artists from all over the world. At CAPS, you will refine your skills, learn new and innovative techniques, and expand your current repertoire with hands-on classes among peers. What's more, all CAPS classes are approved for American Culinary Federation-certified education hours.
About Karen Portaleo
Chef Karen is a cake and chocolate artist creating fantastical cakes at Highland Bakery in Atlanta. She has appeared on numerous television shows including the first “Halloween Wars” on Food Network, and her work has been featured in publications and websites worldwide. She grew up in a family of pastry chefs and combines a background in art, prop and set design, and clay sculpture. Chef Karen teaches cake artistry internationally and has shared her technique and skills in 18 countries for many years. In this fun class, students will learn structure and armature making, create a base structure from rice krispy treats, make modeling chocolate and use it to create realistic facial features, and create (and personalize!) clothing with fondant and paint on chocolate. Karen will work with you on the unique features required to model a male figure – how to create 5-o’clock shadows, skin texture, rugged features, etc. The exact figure to be tackled in the class will be announced closer to the class date; in the interim, enjoy other male figures Karen has made in cake.

Please note: ICE's dress code requires all students to wear black, khaki or checkered pants, a chef's coat and black closed-toe shoes. There are no exceptions. Students who come to class without a chef's coat will be required to purchase one from the Admissions Department.
