Biography

Originally from Milan, Chef Mauro Daniel Rossi began as a chef and eventually co-owner of Topo Gigio Restaurant then Ajo Restaurant in Auckland, New Zealand. He moved to Lund, Sweden, to become the executive chef at John Bull Pub before landing in Los Angeles for his last 20 years of culinary experience.

Chef Mauro was the executive chef at Citrus Restaurant for four years, including a year at the Tokyo location, followed by an executive chef position with Patina Group for two years. In 2002, he transitioned into instructing at the California School of Culinary Arts, Mari e Monti and the International Culinary School at The Art Institute of Hollywood over the last 15 years.

In 2019, Chef Mauro joined the Institute of Culinary Education as lead chef-instructor for our Culinary Arts program. He brings decades of experience and acclaim, from restaurant ownership to menu and concept development, financials and management, and ultimately culinary education.
