ICE Cares

ICE donates food and ingredients to City Harvest on a daily basis and is one of the organization’s top donors.As City Harvest’s “top school donor”. One key aspect of the culinary experience is hospitality. And at its core, hospitality is about giving. We are therefore not surprised, and always impressed, by the contributions of time, money, and food that we see chefs and restaurants making to a wide range of charities.

As a leader in the culinary and hospitality training field, we think it is important that ICE does more than our share to give back. We hope we are role models and inspire our students, customers, and other schools and companies in this regard.

ICE’s charitable and philanthropic activity and initiatives are categorized in three broad areas:

1. Hunger Relief – Local & Global

2. Education & Training

3. Enhancing our Community

To achieve these goals, we give money, we give time, energy, and space at the school, we give scholarships, logistical support to help others raise funds, and much, much more.

Here is a summary of this activity:



City Harvest is New York City’s oldest and most well-known food rescue organization. In 2012 City Harvest rescued, received, and delivered over 40 million pounds of food to help address hunger and food budget issues faced by the 1.7 million New Yorkers who live at or below the poverty level. ICE President Rick Smilow is a City Harvest board director.

ICE assists City Harvest with fundraising by hosting donor development events, donating cooking parties as auction items, and co-sponsoring one of the organization’s trucks. Additionally, ICE has made a major gift to help enable City Harvest to build a multifunctional kitchen in the organization’s new Long Island City warehouse and food rescue facility.

ICE also donates food and ingredients to City Harvest on a daily basis and is now the organization’s “top school donor.”

As an international food relief agency, AAH focuses on hunger relief, clean water and sanitation programs throughout Africa and Asia. ICE President Rick Smilow is on the Board of Advisors of AAH. Over the years, ICE has in part or whole catered donor development events for AAH, and contributed classes and parties for fundraising auctions. Additionally, ICE Chef Andrew Gold is the culinary coordinator for AAH’s annual fall fundraising gala.

Citymeals-on-Wheels delivers meals to homebound elderly in New York City. ICE has provided the organization financial support the last five years by offering classes and parties.


In the wake of many of the most broad reaching natural disasters, ICE’s administration, chef-instructors, and students have a strong track record of pulling together to raise funds for the people and communities who lost the most.

Typhoon Haiyan
From November 17th to the 26th, ICE donated 25% of all Gift Card purchases to the Action Against Hunger's Typhoon Haiyan relief fund.

Hurricane Sandy Relief Fundraisers
In November 2012, ICE planned and ran a series of recreational classes, with 100% of the proceeds raised provided to targeted relief organizations in New Jersey, Staten Island, and Long Island.

Hurricane Katrina Relief Fundraiser
In October 2005, ICE raised $18,000 for Share Our Strength’s Katrina Relief Fund. Writer Calvin Trillin and Chef Susan Spicer were among the guests of honor to address the audience.

Asian Tsunami Disaster Relief Fundraisers
Following this natural disaster, ICE held two culinary fundraisers – a dinner and a demonstration class - that raised over $32,000 for Action Against Hunger’s Tsunami Relief Fund. ICE friends and former Food Network stars Sara Moulton and David Rosengarten participated.



Careers through Culinary Arts Program (C-CAP) operates in seven U.S. locations and works to provide career opportunities in the food service industry for underserved youth through culinary arts education and employment. In partnership with public schools, local businesses, and organizations, C-CAP provides a host of services that include teacher training, jobs and internships, college advising, after-school programs, product donations, and scholarships.

ICE President Rick Smilow served ten years as a board member of C-CAP and still serves as an advisor. Other aspects of ICE’s support of C-CAP include:

• Granting annual scholarships (over $40,000) so that several NYC high school new graduates can attend ICE.

• Hosting the annual New York City scholarship competition cook-off.

• Hosting a one-week cooking summer camp for 16 high school students prior to their senior year.

In 2005, Rick Smilow served as benefit chair for the organization’s annual honors fundraiser that raised $525,000.

Based in Hoi An, Vietnam, STREETS International is an innovative culinary and hospitality job training program founded by former ICE Culinary Management instructor Neal Bermas. STREETS designed and operates an18-month training program for orphans, street kids, and similarly situated young people in Vietnam whose future would otherwise be dim. STREETS is a rare nonprofit that has a revenue source, its popular café in Hoi An’s tourist district that the Lonely Planet Guide now ranks as the town’s #1 restaurant!

ICE is a key supporter of STREETS, and ICE President Rick Smilow is a STREETS board member. ICE Chef-Instructor Erica Wides consulted on STREET’s culinary curriculum.

ICE offers two annual scholarships, totaling $10,000 (based on financial need and merit) through this professional organization. ICE also supports WCR's general programs, frequently serving as a sponsor of its annual conference and awards program.

ICE is an active member of this international organization that brings together food media, chefs, culinary educators and related trade organizations. ICE has been a contributing sponsor of past IACP conferences, and offers an annual $5,000 scholarship (based on financial need and merit) through the organization’s educational wing.

ICE is an active member of this NYC-based group dedicated to elevating the status of chefs and the culinary arts in America. (In fact, the James Beard Foundation’s founding president, Peter Kump, was also the founder of ICE’s precursor.) ICE offers several annual scholarships through the foundation.

Additionally, ICE student volunteers can be found cooking and assisting at the James Beard Foundation’s NYC townhouse and headquarters over 150 nights a year.

Les Dames D’Escoffier is a national organization for women who have reached managerial or leadership roles in the culinary and food service world. ICE offers annual scholarships to Les Dame’s New York chapter, which they award to one or more women, to help them attend ICE.


New York City Board of Education

Since 2005, ICE has hosted an annual six to nine-day skill development course for 45 New York City school system cooks and managers. NYC’s School Food program – the largest school meal program in America – has major improvement initiatives underway, and ICE management has proactively reached out to the executive chef and director to explore means by which ICE can help.

New York City Fire Department
Periodically, ICE hosts a hands-on cooking class for disabled and/or retired New York City firemen.

9/11 Windows of Hope Family Relief Fund
Following the 2001 World Trade Center tragedy, ICE set up a $50,000 scholarship fund for family members of victims to attend ICE’s career programs. This fund has allowed a range of people to start a new career.

Support of Other Culinary Organizations
Assorted fundraising and/or logistical support to groups including Slow Food, Wellness in the Schools (WITS), Black Culinarian Alliance, American Institute of Wine and Food, and the Ohio-based Culinary Vegetable Institute.
