Wine & Beverage Consultant
Richard Vayda has been involved in all areas of food service as chef/owner of a restaurant and catering company, consultant to various operations, and educator at several New York colleges. He has supervised multiple areas of restaurant planning and management, including concept development, menu and wine list design, cost analysis, special events coordination, and staff supervision and training. Having designed programs and instruction at several area schools, Richard currently serves as Director of Wine Studies at the Institute of Culinary Education (ICE) and Culinary Management Instructor.
Mr. Vayda previous businesses include Caffeine coffee and chocolate lounge, a café concept he created, owned and operated in South Norwalk, Connecticut (Best Coffee House in Fairfield County five years consecutively), as well as Chef and Owner of a noted contemporary American restaurant in the Catskills. Richard has also consulted in the opening and operation of other foodservice businesses in the New York area, and is often asked to speak on specialty foods, wines, spirits and other restaurant related topics.
His education includes a Master’s in Foodservice Management from New York University, additional graduate courses at l'Université de Paris and work with the Centre de Formations Technologiques d'Alimentation in Paris (Food Technologies Training Center). Richard holds certifications in Sanitation and Alcohol Service Training from the National Restaurant Association.
