Pastry & Baking Arts Chef-Instructor
A native of Uruguay, Victoria Burghi arrived in New York City at the age of 19. Though she enrolled at Hunter College, her heart was not in academia. Instead, she was drawn to the New York Food & Hotel Management School and soon found herself working at Windows on the World.
Her passion led her through many of the great pastry kitchens of New York City, including Arizona 206, Union Square Café and the Patina Restaurant Group. With 15 years of experience under her belt, Victoria provides students with real life examples of what to do in a crisis while encouraging them to embrace the keys to success — passion, persistence, discipline and skill.
To describe her own culinary voice, she says, “I believe in classical training as the base of all cooking, then slowly developing other techniques that appeal to you as a chef, then finally discovering a style that makes you unique.” Of her students, she says, “I help them master the basic techniques and to understand the reasons behind everything they do. By repetition and honest critique they can improve their skills and create new desserts and flavor combinations. I allow them to experiment and encourage them to taste everything they do.”
