Colin Alevras opened the 24-seat Tasting Room restaurant on Manhattan's East Village in 1999. Using his ICE education and certificate from the Sommelier Scoeity of America, he expertly selected an inventory of American boutique wines that earned accolades from Food & Wine, Wine Spectator, and Zagat. The Tasting Room expanded to a larger location in the original neighborhood and a second location, and remained a presence on the New York dining scene for 10 years. Alevras then became sommelier and beverage director at Daniel Boulud’s DBGB Kitchen and Bar, before joining David Chang’s operations as beverage director for the trendsetting Momofuku restaurants. He joined the team at Andrew Carmellini’s The Dutch in 2011.
