Tom Haynes is the Assistant Director of Admissions at the Institute of Culinary Education.Director of Admissions

Thomas Pallozzi-Haynes has worked at ICE for over 15 years. Prior to working in admissions, he held positions of Chef de Cuisine at the Plaza Hotel, Executive Chef at Gracie Mansion, and Banquet Chef for The Museum of Natural History. These are impressive culinary positions he did not even imagine back at age 13, when he started washing dishes in a local German restaurant. One of Tom’s most unique experiences was representing the Plaza Hotel at a global oyster shucking competition in Helsinki. He came in second place, missing first only because of chipped shells. Tom says that, “My culinary voice comes from my career. I share my experiences to inspire others to follow their passion and understand the realities of the industry and the commitment it takes to succeed. There is no better place than ICE to learn the foundational techniques required to succeed in the culinary world.” Tom is also a fervent advocate for ICE’s Culinary Management Program. He believes that “you can make the best food in the world, have the best service, but if you don’t know how to run the business and make money, you won’t be making that wonderful food for very long.”
