The realm of pastry-shop desserts occupies a wide range of styles from simple and rustic to refined and elegant. This class will focus on those small, portable sweets and how to maximize taste, texture, and presentation all within just a few bites of these compact pastries. Students will explore fruit and chocolate driven concepts expressed in small-format tarts, mousses, and baked goods.
