Join industry consultant, author and from field-to-shelf chocolate expert, Chloe Doutre-Roussel, in a rare appearance in the US. Former buyer at Fortnum and Mason, shop manager for Pierre Hermé at Ladurée and author of the book The Chocolate Connoisseur, Chloe has her own brand and Paris-based company, Chloe Chocolat. She has helped El Ceibo, a co-op of cocoa farmers in Bolivia, the first company to be 100% produced by growers to develop their own gourmet chocolate for export. In this lecture and tasting, she will discuss current trends in America and in cacao producing countries and how they are shaping the world’s fine chocolate industry. Also discussed will be: How do brands choose to differentiate their product as they evolved in the last 10 years? How different is fine chocolate from mass market chocolate? How does Fair trade, Organic, Heirloom, and other certifications influence the market? Is chocolate too cheap? And what should labeling allow?
